The Purple Canopy Covers A Cornucopia

In the bleaker winter season, some think it difficult to find vibrant local produce but our market constantly proves there is an abundance of brightly color-filled booths. Healthy Kitchen sets up a bounty of produce every week and even takes it up a notch using their purple canopy to make the market pop even from a distance.

But up close, you can see that Fred and his family bring a colorful cornucopia including potatoes, beets, lettuce, and cabbages just to name a few. As Healthy Kitchen depends on their harvest for their sustenance, they want to make sure there is ample variety in their everyday meals.

I have recently discovered their cabbages and I buy at least one to cook every week. The purple cabbage, also referred to as red cabbage, is fantastically simple and hearty to prepare. I simple cut it in half, lather in olive oil and seasonings then roast for 40 minutes to an hour at 400. I will seriously eat a whole cabbage every week by myself. My German grandmother would be so proud.
