We have the meats! All season long, you have access to humanely raised, non-gmo fed meat products like pork chops or ground sausage. One of our newer vendors, Flying Pig Ranch/Land To Table Farms has been diligent in bringing back a heritage breed of red wattle hogs, which the purpose of the wattles are unknown but owner Grace thinks they aide with temperature regulation which is definitely coming in handy the past few months. Red wattle hogs are known for their hardiness, foraging activity, and rapid growth rate; which accounts for them producing a lean meat that is flavorful and tender. They also ensure the hogs have access to plenty of acorns to help finish that flavorful lean meat.

You can choose from their uncured bacon or ham, boston butt, slab of ribs, sausage and (my favorite) the pork chops. Whether you use Flying Pig Ranch’s pork as an accent or the main dish, it will become the centerpiece of the plate. When cooking, I do have a tendency to keep it simple especially with meats and, besides searing the chops in a well heated, well coated cast iron skillet, I sometimes top it with some warm Ada’s Heritage pepper jelly.
