Also not to be missed: the Chattanooga Food Center will host a food demonstration at this week’s market. They’re collaborating with Jess Revels of Mac’s Kitchen & Bar to make a butternut squash soufflé with fall crostini. Stop by for a sample!

Three ingredients: Grass fed ribeye, arugula, roasted delicata squash. Feeling ambitious? Add a drizzle of olive oil to your greens or (not pictured) incorporate the seeds from the roasted squash for an element of crunch.

Pro tip: chop overly-fatty pieces of meat and store temporarily in fridge or for several months in freezer. Later, use the fat in place of butter or oil to coat your cookware. Works like a dream for frying eggs or caramelizing an onion.

Yes – Kelsey, the farmer that has been around chickens since childhood and works year-round to provide the region with the healthiest, nutrient-dense eggs. That Kelsey.

He visited Alexandre, a truly regenerative family farm, to attend a pasture poultry event and learn how to scale his farm effectively without compromising quality or sustainability.
